Sandwich prep tables come in widths from about 27 to 72 inches, and the width decides how many 1/6 size pans fit on the rail: in the Migali line we carry, that is 8 pans at 27.5 in. and 18 pans at 72 in. Choose the size by counting the ingredients one cook needs within reach during service, then check that the cabinet below holds the backup stock.
The size range at a glance
These are the Migali sandwich prep tables in this guide, with figures from each product page:
- 27.5 in., Migali C-SP27-8-HC: eight 1/6 size pans; the rail takes 4, 6 and 10 in. deep pans.
- 36 in., Migali C-SP36-10-HC: ten 1/6 size pans, with a cutting board.
- 48 in., Migali C-SP48-12-HC: twelve 1/6 size pans and two solid doors below.
- 60 in., Migali C-SP60-16-HC: sixteen 1/6 size pans.
- 72 in., Migali C-SP72-18-HC: eighteen 1/6 size pans, listed at 75 W x 33 D x 46 H in.
All five are listed as ETL certified on their pages. Pans are sold separately on the 27.5 in. model, so check each page for what is included. See the full range in our sandwich and salad prep tables.
Count your ingredients first
The pan count is the number that matters most during a rush. Write down every topping, protein, cheese and sauce that has to be within reach for your menu. Add one or two pans for specials. If the count is 10, a 36 in. table fits; at 14 or 15 you are into the 60 in. size.
Pan size changes the math. A 1/6 size pan is the standard on these rails. Using larger pans for high volume items, such as a 1/3 size pan for lettuce, takes the space of two sixth pans, so the table holds fewer separate ingredients. Plan the rail layout on paper before you order.
Check the cabinet below
The rail holds what you use during service. The cabinet below holds the backup pans and wrapped stock you pull from as the rail runs low. Wider tables have more doors and more shelf space. If you prep a lot ahead of service, the cabinet capacity can matter as much as the rail.
Match the width to the station
- One cook making sandwiches or wraps: 27.5 to 48 in. usually covers it.
- Two cooks working side by side, or a menu with many toppings: 60 to 72 in.
- Food trucks and tight kiosks: the 27.5 in. size, after checking the depth and height against the space.
- A pizza line needs a different rail and a deeper cutting board; see our pizza prep refrigerators.
These are common practice ranges, not rules. Your menu and workflow decide.
Measure before you order
- Floor space, plus room for the doors to open fully.
- The working height. The 72 in. model is listed at 46 in. high to the top of the unit.
- Every doorway, turn and stair on the delivery path. The listed depth of about 33 in. is usually what has to fit through the door.
- Ventilation clearance around the condenser, as the manual describes.
- A suitable outlet. Product pages ask for a dedicated circuit.
Keeping food at temperature
The FDA Food Code (section 3-501.16) requires cold held time/temperature control for safety food at 41 F or below. On a prep table, the rail is the part most likely to run warm, because it is open during service. The Migali C-SP27-8-HC page describes forced air refrigeration with cold air under the pan rail. Good habits help too:
- Close the rail lid during slow periods and overnight.
- Do not overfill pans above the rail.
- Load food that is already cold. A prep table holds temperature; it is not designed to chill hot food.
- Check a thermometer in the rail during service, not only the cabinet display. Section 4-204.112 asks for a temperature measuring device that reads the warmest part of a refrigerated unit.
Your local health department has the final say on how these rules apply to your kitchen.
Mistakes to avoid
- Buying by width alone without counting pans.
- Forgetting the cutting board. Check each page for what comes with the table, and add cutting boards if you need a second color or size.
- Placing the table where heat from a fryer or range blows onto it. Leave the clearance the manual asks for.
