What to check before you order

Work from your menu and your pans. List the tasks each station performs, then match a tool to each one instead of buying a general set. Pay attention to handle length for deep pots, heat resistance for tools that rest near burners, and whether the edge is safe for nonstick surfaces. For ladles, spoodles and scoops, pick the portion size that matches your recipe cards so plating stays consistent. The usual mistake is buying one of each. Busy stations need duplicates so service does not stop for the dish pit.
