A chef base is a low refrigerated cabinet with drawers and a heavy-duty top built to carry countertop cooking equipment. Cooks pull cold ingredients from the drawers right below the griddle or broiler, which saves steps to the walk-in during service.

How to choose

Width

Match the chef base to the equipment on top. An extended top gives extra room for a wider griddle or a landing space next to it.

Top load

Check that the equipment on top is within the weight and heat limits of the chef base, and use equipment with legs or a proper stand where the maker requires it.

Drawers

Drawers usually hold hotel pans. Count how many pans of ingredients the station needs during a rush.
