Rear door cases are served by staff. Front access (-S) and open cases let customers help themselves.

Countertop cases from 14" fit beside a register; 46" and 50" units hold a full hot grab-and-go range.

Holding, not cooking

Heated cases hold cooked food at serving temperature. Follow your local health code for holding times.

Full service or self-serve?

A full service case has doors on the staff side only, so employees hand food to customers. Cases with front and rear doors, or open grab and go cases, let customers serve themselves. Merchandisers with slanted shelves put wrapped items at eye level for impulse sales.

How long can food stay in a heated display case?

Hot holding keeps cooked food at a safe serving temperature, but it is not a cooking appliance. Follow your local health code for hot holding temperature and time, and check product temperature regularly.

What to check before you order

Start with the food. Fried and baked items need dry heat to stay crisp, while items that dry out hold better in a case with humidity. Then decide whether staff will serve from the back or customers will help themselves, since that sets the door layout. Measure the counter or floor space and check the case height against sight lines to the register. Confirm the voltage and plug. Remember that a display case holds hot food and is not meant to cook or reheat it.
