How to choose

Griddle or charbroiler?

A griddle cooks on a flat steel plate: eggs, pancakes, smash burgers, cheesesteaks and grilled sandwiches. A charbroiler cooks over open grates and gives steaks, burgers and chicken grill marks and a charred flavor. Many kitchens run one of each.

Manual or thermostatic controls

Manual controls set the flame height and are simple and durable, good for high-heat burger and breakfast lines. Thermostatic controls hold a set plate temperature, which gives more consistent results when several cooks share the griddle.

Plate thickness and size

A thicker plate (3/4" or 1") holds heat better when you load it with cold product. Size the griddle to your busiest service: roughly one 12" section per cook or per menu item you run at the same time.

Gas or electric

Gas griddles and charbroilers heat fast and cost less to run where gas is available. Electric griddles suit food trucks, kiosks and kitchens without gas. Check voltage: the larger electric griddles need 208V or 240V.

Griddle, charbroiler or panini press?

A griddle is a flat steel plate for eggs, pancakes, smash burgers, cheesesteaks and anything cooked on a flat surface. A charbroiler cooks over open grates for grill marks and a char flavor on steaks, burgers and chicken. Radiant charbroilers use metal radiants over the burners; char-rock broilers use lava rock, which gives more smoke flavor. A panini press cooks from both sides at once for sandwiches, quesadillas and wraps, and plugs into a standard outlet on most models.

Frequently asked questions

What is the best commercial grill for a small restaurant?

Most small kitchens start with a 36 in. gas griddle, which covers breakfast and burgers in one unit. Add a 24 in. charbroiler if steaks or grilled chicken are on the menu.

Gas or electric griddle?

Gas griddles heat faster and cost less to run where gas is available. Electric griddles suit food trucks, kiosks and kitchens with no gas line; check the voltage on each listing, since larger units need 208/240 V.

Do I need a hood for a commercial griddle or charbroiler?

Gas griddles and charbroilers produce grease and smoke and in most areas must sit under a commercial hood. Check with your local fire and health departments before installing.

Can gas griddles run on propane?

Many models ship for natural gas with an LP conversion kit. Check the fuel type on each product page.

Do I need a stand?

Countertop griddles and charbroilers need a sturdy, heat-safe surface. See our equipment stands.

Is freight included?

Yes. Freight and liftgate delivery are included on every order to the continental United States, with nothing added at checkout.
