How to choose a convection oven

Full size or half size

A full-size convection oven takes full 18" x 26" sheet pans and is the workhorse for restaurants, bakeries and institutional kitchens. A half-size countertop oven such as the Waring WCO500X or Cookline HCVE-16-120 takes half size sheet pans, plugs into a standard 120V outlet and suits cafes, concession stands and kitchens without room for a floor model.

Single or double deck

A double deck gives you two independent ovens in the same floor space as one. Choose it if you bake and roast at different temperatures at the same time, or if one oven is already full during service. Westlake (GCO511 and GCO511S), Dukers and Cookline (CC100-SGL and CC100-DBL) all offer single and double stack versions.

Gas or electric

Our full-size models are gas. Gas ovens heat quickly and cost less to run where natural gas is available. Check whether you need natural gas or LP before you order, and plan for a hood: full-size gas ovens normally have to sit under a ventilation hood.

Why convection

A fan moves hot air around the cavity, so food cooks more evenly and faster than in a standard oven, and you can bake several full racks at once. That makes convection ovens the standard choice for sheet pan baking, roasting and reheating.

Countertop or full size convection oven?

A half size countertop convection oven plugs into a standard 120 V outlet and suits cafes, concession stands and kitchens baking small batches. A full size floor model holds full sheet pans and suits restaurants, bakeries and catering. A double stack doubles capacity on the same floor space, with each oven running on its own controls.
