Why induction

Induction heats the pan directly, so the surface around it stays cooler and heat-up is fast. It plugs into a standard 120V outlet and needs magnetic cookware such as cast iron or magnetic stainless steel.

What to check before you order

Check your power first. Countertop induction units come in versions for a standard wall outlet and versions that need a higher voltage circuit, and the product page lists the voltage, amperage and plug type. Then check your pans, because induction only heats cookware with a magnetic base. A magnet that sticks firmly to the bottom is a quick test. Match the cooking surface to your largest pan, and keep the air intake and exhaust vents clear so the electronics stay cool.
