How to choose a bakery case

Refrigerated or dry

Anything with cream, custard, mousse or fresh fruit must be refrigerated. Bread, croissants, cookies and donuts keep better in a dry case, which costs less to run.

Curved or straight glass

Curved glass is the classic pastry shop look with a wide view. Straight glass looks modern, suits minimalist shops and lines up flush with other cases.

Size and shelves

Count the trays and cakes you want on display at once. A 36" case suits a cafe; 48" to 72" floor cases make a full bakery counter. Adjustable shelves let you fit tall cakes and flat trays in the same case.

Rotating and vertical displays

A rotating or tall vertical cake display puts whole cakes at eye level and draws attention from across the shop, while taking little floor space.

Refrigerated or dry bakery case?

Anything with cream, custard, fresh fruit or cheesecake needs a refrigerated case. Bread, cookies, donuts, muffins and most pastries keep their texture better in a dry case, since refrigeration can dry them out or make crusts go soft. Many bakeries run one of each.

What size bakery display case do I need?

Measure the counter run first. 36 to 48 in. cases suit most coffee shops and small bakeries; 60 to 72 in. cases suit full bakeries and dessert counters. Countertop units from 27 to 48 in. add display space without floor room.

Certification is listed on each product page. The Marchia bakery cases are ETL listed.
