How to Clean a Granita Machine

Granita and slush machines hold sugary mixes that feed bacteria and mold if they are not cleaned right. Residue collects in the bowls, augers, seals and dispensing valves. A regular cleaning and sanitizing schedule keeps drinks safe and keeps the machine freezing evenly.

Manual, Power and Products

Start with the manufacturer’s manual for your granita machine. It lists the parts that come off, how to remove bowls and augers and which cleaners are safe for the plastic. Turn off and unplug the machine before removing parts. Use food-safe detergent and a food-contact sanitizer per the label. Avoid harsh chemicals that can cloud or crack clear bowls.

How Often

Follow the manual and local health department rules. Many operators fully clean granita machines at least weekly, and more often for dairy-based mixes, which may need daily cleaning. Wipe the exterior and dispensing area daily.

Step 1: Empty the Bowls

Turn off freezing and let the mix thaw slightly. Drain the remaining product through the dispensing valves. Discard or store it per your food safety rules.

Step 2: Rinse

Fill each bowl with warm water, run the auger to circulate it and drain it. Repeat until the water runs clear.

Step 3: Disassemble

Unplug the machine. Following the manual, remove:

  • The lids.
  • The bowls.
  • The augers.
  • The dispensing valves and handles.
  • The seals and gaskets.
  • The drip tray.

Step 4: Wash, Rinse, Sanitize

  • Wash all parts in warm water and mild detergent. Use soft brushes for valve openings.
  • Rinse in clean water.
  • Sanitize per the label.
  • Air dry on a clean surface.

Step 5: Clean the Evaporator and Body

Wipe the evaporator cylinders and machine body with detergent, rinse and sanitize. Do not spray water into the electrical areas.

Step 6: Lubricate and Reassemble

Many machines need food-grade lubricant on seals and gaskets. Use only what the manual specifies. Reassemble the parts and check that the bowls seat tightly with no leaks.

Check the Condenser

The machine needs airflow to freeze well. Clean the condenser filter or grille per the manual.

Model Examples

A single bowl machine like the Coldline GRANITA-1N single 1 bowl pourover granita machine cleans quickly. Double and triple bowl machines like the Coldline GRANITA-2N double 2 bowl pourover granita machine and the Coldline GRANITA-3N triple 3 bowl pourover granita machine take longer, so clean one bowl at a time while others keep running if the manual allows.

Signs You Need to Clean Sooner

  • Sour or off smells.
  • Visible mold at seals.
  • Leaks at the valves.
  • Mix that does not freeze evenly.

Handle the Mix Safely

Follow the mix maker’s directions for dilution and storage. Store opened concentrate as its label directs, usually refrigerated. Never top off an old batch with new mix. Drain, clean and start fresh so older product does not sit in the bowl for days. Keep a small log of cleaning dates and mix changes for each bowl.

Parts to Keep on Hand

Seals, gaskets and valve O-rings wear out with repeated cleaning. Keeping spares means a torn seal does not shut down a bowl during a busy weekend. Check the manual for the correct part numbers for your model.

Next Steps

If your machine leaks or will not freeze even after cleaning, compare models in bar equipment and bar refrigeration. Questions? Contact Express KitchQuip and we will help you pick the right size and configuration.
