Sheet Pan Buying Guide: Sizes, Gauge and Racks

Buy sheet pans by size first, then gauge and rim, then solid or perforated. Full size pans are 18 x 26 in. and fit full size ovens and bun pan racks; half size pans are 13 x 18 in. and fit half size and countertop ovens. Check your oven interior and your racks before you order, then buy enough to cover your busiest day plus the pans that are in the dish area.

Shop the equipment in this article: 18″ x 26″ full-size aluminum sheet pans, 19-gauge perforated aluminum bun pan and 20 tier bun baking pan rack. Freight is included on every order.

Sizes

Sheet pans, also called bun pans, follow standard sizes:

  • Full size: 18 x 26 in. Our full size aluminum sheet pans are 18 x 26 x 1 in., sold in packs of 6 or 12, and the Thunder Group ALSP1826M is the same size in 18 gauge.
  • Two-thirds size: 16 x 22 in., such as the Thunder Group ALSP1622.
  • Half size: 13 x 18 in., the most common size for countertop convection ovens and small kitchens. Our perforated bun pan is 13 x 18 in.

Check the oven before buying full size pans. Our full size pan page says the oven interior needs to be at least 26 in. wide or deep. Countertop convection ovens such as the Waring WCO500X and the Cookline HCVE-16-120 hold four half size pans.

Material and gauge

Aluminum is the usual choice for baking because it heats quickly. Gauge is a thickness number, and a lower number means thicker metal: 18 gauge is thicker than 19 gauge. Thicker pans resist warping in a hot oven. Our full size pans are 19 gauge aluminum, the Thunder Group ALSP1826M is 18 gauge, and our perforated pan is 19 gauge 3003 aluminum.

Rim

A wire reinforced rim keeps the pan from bending and twisting. Our full size pans have a rim reinforced with galvanized steel wire, and the perforated pan has a wire-in-rim edge. Our full size pans have a 1 in. rim; for roasting that releases a lot of liquid, a deeper pan or hotel pan holds more.

Solid or perforated

Solid pans cover most baking, roasting, cooling and holding. Perforated pans have small holes that let hot air reach the bottom of the product, which in common practice helps bread, rolls and pizza crusts brown and crisp. Perforated pans are not for anything that drips.

Bun pan racks

Racks store, cool and move sheet pans. Our options:

How many pans to buy

Count the pans in use at the busiest point of the day: in the oven, on racks cooling, holding prepped food, and in the dish area waiting to be washed. In common practice, kitchens add a margin on top so a slow dish cycle does not hold up production. Buying in packs of 6 or 12 makes this easier.

Space and clearance

A full height rack such as the ALSPR020 is 69-1/4 in. tall and needs a clear path to the oven and the walk-in, so measure doorways and aisles. Our racks list 3 in. slide spacing; for taller items, use every other slide.

Cleaning and care

Our full size sheet pan page says to hand wash them to keep the finish, because dish machine chemicals can darken aluminum. Wash, rinse and sanitize pans used for food as you would any utensil, and let them air dry. Do not scour with steel wool, which scratches the surface.
