What a dry bakery display case is for

A dry glass display case shows baked goods at room temperature, with no refrigeration. It keeps bread, bagels, muffins, cookies, croissants, donuts and similar items in view at the counter while keeping them away from hands, dust and the air of a busy shop. It suits cafes, coffee bars, bakeries, delis and convenience counters.

What should not go in a dry case

A dry case does not cool anything. Common practice is to keep anything that needs refrigeration in a refrigerated case, including items with cream or custard fillings, cream cheese frosting, whipped toppings or fresh fruit. Many health departments set rules on which foods must be held cold, and your local health department has the final say. If your menu has both kinds of items, pair a dry case with one of our refrigerated displays. For hot items such as pastries served warm, look at heated display cases instead.

Curved or straight glass

Curved glass gives an open, rounded view and a classic bakery look. Straight glass looks more modern and lines up neatly with square counters and other cases. Both protect the product the same way, so choose the shape that matches the rest of your front counter.

Sizing a countertop case

Measure the counter depth and width first, then check the case dimensions on each product page. Leave room for the register, a card reader and space for customers to point and order. Think about how many trays of product you want to show at once, and how often staff can restock during the day.

Rear access

Most countertop bakery cases load and serve from the back, so staff can reach product without going around the counter. Make sure there is enough room behind the case for doors to open fully and for a tray to come out.

Cleaning

Wipe the glass daily with a soft cloth and a glass-safe cleaner, and avoid abrasive pads that can scratch. Empty and wipe the shelves and trays regularly to clear crumbs and sugar.
