Buffet and Salad Bar Food Safety: Rules, Equipment and a Checklist

A buffet or salad bar has to keep cold food at 41 F or below and hot food at 135 F or above, protect food from guests with food guards, give every item its own serving utensil, have guests take a clean plate for each trip, and never put food that has been on the line back into service. The FDA Food Code sets those rules; your equipment and your staff’s monitoring are what make them happen during a busy service.

Cold food at 41 F or below

Cold foods that need temperature control have to be held at 41 F or below (Food Code section 3-501.16). A refrigerated commercial salad bar keeps pans cold from below. Our Coldline CTP48SG is a 48 in. countertop unit with 4 pans, a glass cover and a listed range of 33 to 41 F; the CBT-48-CSG is a 48 in. freestanding salad bar with a sneeze guard and pan cover.

  • Pre-chill the unit before loading.
  • Put food out already cold; a salad bar holds temperature, it does not chill warm food.
  • Do not pile food above the cold zone of the pan.
  • Check the food, not only the unit display.

Hot food at 135 F or above

Hot food has to stay at 135 F or above (3-501.16). Food that is cooked, cooled and then reheated for hot holding has to reach 165 F within 2 hours before it goes on the line (3-403.11). Holding equipment keeps food hot; it is not built to reheat it.

Options for the hot side:

  • A steam table such as the Prepline EST60-4O, a 60 in. four well electric unit with a galvanized undershelf.
  • A countertop bain marie food warmer for sauces, gravy and soups at the end of a line.
  • Chafers for catered events, such as the Thunder Group SLRCF001 8 qt full size welded chafer.
  • The Hatco GRBW buffet warmer, with an infrared top, heated base and sneeze guards in 36 or 48 in. sizes.

Protect food from guests

Food on display has to be protected from contamination by guests, using food guards, display cases or other effective means (3-306.11). In practice that means a sneeze guard over every self-service pan, at a height and depth that blocks the space between a guest’s mouth and the food. Check local rules for guard dimensions.

Some foods should not be self-service at all. The Food Code limits self-service of raw, unpackaged animal foods such as raw meat and seafood, with a few exceptions, and requires self-service areas to be monitored by trained staff (3-306.13).

Utensils and clean plates

  • Every pan gets its own serving utensil, stored with the handle out of the food (3-304.12).
  • Guests take a clean plate for second helpings; they may not reuse a soiled plate to get more food (3-304.16). Post a sign and have staff watch for it.
  • Replace utensils that fall into the food or onto the floor.

Food that comes back

Food that has been served or offered to guests generally may not be offered again (3-306.14). Food left on a self-service line at the end of service is discarded, not combined with fresh food or returned to the walk-in.

Smaller pans, changed more often

Use shallower or smaller pans and swap them out, rather than one deep pan that sits for hours. Never pour fresh food on top of old food in the same pan: bring a full new pan and take the old one away.

Check and log temperatures

Probe each pan on a set schedule and log it. Many operations check every two hours, which leaves time to act before food has been out of temperature for long. If food reads out of range, follow your written corrective action, which usually means discarding it. Some operations hold food using time instead of temperature; the Food Code allows that only under written procedures, with time limits such as 4 hours for hot or cold food that is then discarded (3-501.19). Check with your health department before using time as a control.

Allergens and labels

Guests at a buffet cannot ask the cook in the moment. Label every item with its name, and as common practice list major allergens on the label or a nearby card. Some jurisdictions require it.

A buffet checklist

Before opening:

  • Cold unit reading 41 F or below, hot units preheated
  • Food going out at the right temperature
  • A utensil in every pan, guards in place, labels out
  • Clean plates stocked at the start of the line
  • Temperature log started

During service:

  • Temperatures checked and logged on schedule
  • Pans swapped, utensils replaced, spills wiped
  • A staff member watching the line

At close:

  • Food on the line discarded
  • Pans, wells, guards and utensils cleaned and sanitized

Frequently asked questions

How long can food sit on a buffet?

As long as cold food stays at 41 F or below and hot food at 135 F or above, there is no fixed limit in the Food Code, but quality drops. If you use time instead of temperature, follow written procedures and the time limits in section 3-501.19.

Do buffets need sneeze guards?

Self-service food has to be protected from guests, and sneeze guards are the usual way to do it (3-306.11). Your health department may set guard dimensions.

Can leftover buffet food be saved for tomorrow?

Food that was offered on a self-service line generally cannot be served again (3-306.14). Plan quantities so less is left at close.
