A reach-in freezer keeps frozen proteins, fries, desserts and backup stock within easy reach of the line. Freezers work harder than refrigerators, so size, placement and airflow matter even more. This guide walks you through the choices that decide whether a freezer serves you well for years or struggles every summer.
For a specific model, see our Westlake WK-48F double door freezer.
Sizing by Sections
Like refrigerators, reach-in freezers come in one, two and three sections. One-section units are roughly 25 to 31 inches wide. Two-section units are around 49 to 54 inches. Three-section units run near 78 to 82 inches.
Size by what you buy, not what you serve. If you take one frozen delivery a week, your freezer must hold a full week of product plus safety stock. If you get deliveries twice a week, you can often drop a size. Count cases of fries, boxed proteins and dessert, and remember frozen cases are dense and heavy, so shelf load matters.

Configuration Choices
Solid doors are the standard choice for back-of-house freezers because they hold temperature best. Glass-door freezers make sense for retail, grab-and-go ice cream or front counter displays where customers or servers need to see product.
Narrow-depth models help in tight kitchens where a standard depth would block an aisle. Check depth with the door open, because a swinging door needs room too.
Look at the defrost system. Commercial freezers run automatic defrost cycles. Frequent door openings in a busy kitchen bring in moist air that turns to frost, so a unit sized too small, opened constantly, will ice up faster.

Utilities
Freezer compressors draw more power at startup than most refrigerators. Give each freezer its own dedicated circuit where possible. Check the plug and amperage on the spec sheet and have a licensed electrician confirm the outlet matches. Voltage drop from long runs or shared circuits is a common reason freezers fail to hold temperature.
Space, Heat and Clearance
Heat is the enemy. A freezer placed beside a fryer or charbroiler will run nonstop. Keep it on a cool wall with space above and behind for the condenser to vent. Measure doors and hallways before delivery, and remember that some units need doors removed to pass through a 32 inch opening.
Temperature Targets
Most operators hold freezers at 0F or colder. Ice cream and some desserts are often held a bit warmer for scooping, which is why dipping cabinets exist as a separate category. Keep a thermometer inside and log readings each shift so you catch a failing unit before you lose product.
Cleaning and Care
Check door gaskets weekly. A torn gasket lets in moist air and causes heavy frost. Clean the condenser coil monthly. If you see ice building on the evaporator or around the door frame, check the gasket and door closing first, then call for service. Never chip ice with a knife.
Questions to Ask Before You Buy
- How many days of frozen product must I store between deliveries?
- Is the location away from cooking equipment?
- Do I need a narrow-depth unit for a tight aisle?
- Will staff open this door constantly during service?
- Is there a dedicated circuit with the right plug?
