Takeout and delivery orders do not behave like dine-in tickets. Food leaves the kitchen, sits in a bag and travels before anyone eats it. Orders arrive in bursts from several apps at once. The kitchen that handles this well usually made a few targeted equipment changes rather than a full remodel.
Map Your Off-Premise Flow
Watch where takeout orders go today. Who packs them? Where do they wait for pickup? Where do drivers stand? In many kitchens, bags end up on the pass, blocking dine-in plates, while drivers crowd the front door. The fix starts with a dedicated packing and pickup zone.
A Packing Station
Set up a separate table for packaging with containers, lids, bags, utensils, napkins and sauce cups within reach. A stainless work table works well; add an overshelf for supplies. The work table with overshelf gives you a prep surface below and storage above. Keep the packing station close to the pass so food does not travel far.
Holding Hot Orders
Orders often finish before the driver arrives. Holding them hot, and safely at 135F or above, protects quality. A heated holding cabinet keeps bagged or boxed orders warm while they wait. The Prepline MPN1836 full size heated warming holding cabinet holds pans or trays on racks. For quick holds at the pass, strip warmers keep plated or boxed food warm while the rest of the order is packed. The L&J LJFW60 60″ strip heat lamp, 1000W covers a long pass.
Fried Foods
Fries and fried items lose crispness quickly in closed containers. Fry to order as close to pickup as you can. A fry holding station like the Hatco UGFFL-120-T-QS UltraGlo portable fry warmer keeps them warm for short holds. Vented containers help too.
Sealing and Tamper Evidence
Sealed bags reduce spills and reassure customers that nothing was opened in transit. A bag sealer like the Thunder Group IRTISH200 8″ electric bag sealing machine can seal plastic bags for soups and sauces. Tamper-evident labels are another option.
Cold Items and Drinks
Salads, desserts and drinks should not sit next to hot food. Stage them in a small reach-in or undercounter refrigerator near the packing station and add them at the last moment. A glass door merchandiser such as the Unity U-17M 17″ glass door merchandiser refrigerator by the pickup counter can also sell bottled drinks as add-ons.
Menu Adjustments
Some dishes travel badly. Consider packaging sauces separately, par-cooking items that finish in the customer’s oven, or removing items that do not hold up. A smaller off-premise menu often runs faster and gets better reviews.
Pickup Area
Give drivers and customers a clear, marked pickup shelf, away from the kitchen door. Wire shelving or a wall shelf with labels by order name or number works for many operators. Keep it visible from the counter so staff can see what is waiting.
Equipment Capacity
If off-premise orders add volume at the same time as dine-in rush, your fryer, griddle or oven may become the bottleneck. Track orders by hour for two weeks and see whether any station falls behind. That tells you where more capacity will pay off.
Next Steps
Set up a packing zone and a holding plan first. Then review food warmer and proofer cabinets and heat lamps and strip warmers. Questions? Contact Express KitchQuip and we will help you pick the right size and configuration.
