Work Table vs Prep Table: What Is the Difference?

Most of the time they are the same thing: a stainless steel table used for preparing food. The difference only matters when “prep table” means a refrigerated prep table, which is a refrigerator with a cutting board and a cold pan rail built into the top.

To replace or raise table legs, see these 35 in. adjustable stainless table legs.

What a work table is

A work table is a flat stainless steel top on legs. It may have an undershelf or an open base, and it may have a backsplash along the rear edge. It has no refrigeration and no utility connections. You use it for cutting, mixing, portioning, plating, staging, or holding countertop equipment. Sellers and kitchens call the same table a work table, a prep table or a utility table, and there is no technical line between those names.

What a refrigerated prep table is

A refrigerated prep table is a piece of refrigeration equipment. The base is a refrigerated cabinet with doors or drawers. The top has a rail that holds food pans cold and a cutting board along the front edge. There are two main kinds:

  • Sandwich and salad prep tables, with a pan rail and a cutting board sized for building sandwiches, salads and bowls
  • Pizza prep tables, with a raised rail and a deeper board to fit a pizza

Because it is a refrigerator, it needs power, room around it for air flow as the manual specifies, and regular cleaning of the condenser coil and door gaskets.

How to tell which one you need

Ask where the ingredients are during service. If cooks build orders from many cold ingredients and need them within arm’s reach for hours, that is a job for a refrigerated prep table. If the table is for knife work, mixing, breading, resting pans or holding a slicer, a plain work table does the job with nothing to plug in and nothing to maintain.

Most kitchens end up with both: work tables in the prep area where food is cut and portioned ahead of time, and a refrigerated prep table on the line where orders are assembled.

The in-between option

A worktop refrigerator is a refrigerated base cabinet with a flat stainless top and no pan rail. It gives you cold storage under a small work surface. It suits a station that needs a few cold items below and clear space on top.

Other tables you will see named

  • Equipment stand: a lower, heavier table built to hold countertop cooking equipment at working height
  • Enclosed base table or cabinet: a work table with a closed cabinet underneath instead of an open shelf
  • Wood top table: a maple top for bakery and dough work
  • Work table with sink: a table with a sink bowl built into the top

What to buy

For a plain prep surface, see our stainless steel work tables. For cold assembly, see sandwich and salad prep tables and pizza prep tables. The in-between choice is under undercounter and worktop refrigerators. For countertop equipment, look at equipment stands, and for closed storage see enclosed cabinets. Freight to the 48 contiguous states is included in the price.
