If you are adding pizza to a menu or opening a pizza shop, one of the first decisions is size: a countertop oven or a full floor model. The answer depends on your volume, your space and how central pizza is to your business. This guide compares the two and gives simple rules for choosing.

What a Countertop Pizza Oven Is
Countertop pizza ovens sit on a sturdy table or stand. Most are electric, with one or two decks, and they are sized for smaller pies and lower volume. They are common in bars, cafes, convenience stores, concession stands and restaurants where pizza is one menu item among many.

What a Floor Model Pizza Oven Is
Floor model deck ovens stand on their own legs and often have large decks that hold several pizzas at once. Many are gas, and they can be stacked for more capacity. They are built for pizzerias where pizza is the main product and volume is high all day.
Capacity
The core difference is how many pies you can bake per hour. A floor oven with a wide deck can hold several large pizzas at a time and recover quickly between loads. A countertop oven may fit one or two pies per deck. Estimate your peak hour, then check deck size and deck count on each product page.
Space and Installation
Countertop ovens need a strong, heat-safe table or stand and clearance around the unit. Many plug into a dedicated electrical circuit. Floor ovens need floor space, a gas line or heavy electrical service, and usually a hood. Floor models are heavy, so plan for delivery access and placement.
Have a licensed electrician or gas fitter confirm service, and check hood requirements with your local building and fire officials.
Heat Up and Recovery
Heavier floor ovens with thick decks store more heat. They take longer to preheat but recover faster during rushes. Countertop ovens heat up quickly but can lose temperature when you load several pies in a row.
Flexibility
A countertop oven lets you test pizza on your menu without committing a big footprint. If demand grows, you can add a second unit or move to a floor oven later.
Choose a Countertop Pizza Oven If
- Pizza is a side item or a new addition to test.
- You have limited floor space and no room under the hood.
- Your volume is light to moderate.
- You run a bar, cafe, concession stand or convenience store.
Choose a Floor Model Pizza Oven If
- Pizza is your main product.
- You need to bake many large pies at once during peak hours.
- You have space, gas or heavy electric service, and hood capacity.
- You want thick decks for fast recovery.
Supporting Equipment
Either way, plan the station around the oven. A refrigerated pizza prep table keeps toppings cold and close. A pizza warmer holds finished slices at the counter.
