Deck ovens and conveyor ovens both make good pizza, but they suit different kinds of shops. One rewards skill and gives a classic bake. The other rewards consistency and speed with less training. This guide compares them and gives clear guidance on which to choose.
How a Deck Oven Works
A deck oven bakes pizza directly on a heated stone or steel deck. Heat comes from the deck below and the chamber above. The cook loads and turns pies with a peel and decides when each one is done. Deck ovens are known for a crisp, well-browned bottom crust.

How a Conveyor Oven Works
A conveyor oven moves pizza through a heated chamber on a moving belt. You set the temperature and belt speed, load the pizza at one end, and it comes out the other end done. Every pie gets the same bake time, so results are very consistent.

Crust and Quality
Deck ovens tend to give a more traditional crust with char and browning, and they handle hand-stretched dough well. Conveyor ovens give an even, predictable bake. With the right settings they make a good pizza, but many operators feel deck ovens have an edge for artisan or New York style pies.
Consistency and Training
This is where conveyor ovens stand out. A new employee can load a conveyor and get the same result as a veteran. Deck ovens need staff who know how to read the oven, rotate pies and manage hot spots. If you have high turnover, that matters.
Speed and Volume
Conveyor ovens handle a steady stream of orders without the cook watching each pie. They are common in delivery-focused shops. The trade-off is that every item goes through at the same belt speed, so a thin crust and a loaded deep dish may need different settings or a second oven. Deck ovens can also run high volume, especially with multiple decks, but output depends more on the cook.
Versatility
Conveyor ovens are also good for sandwiches, flatbreads, wings and reheating. Deck ovens handle breads, calzones and other baked items. Both can do more than pizza.
Belt Width and Deck Size
For conveyors, belt width limits the largest pizza. A 14 inch belt fits up to about a 14 inch pie. For deck ovens, deck size and number of decks set capacity. Check the product page for exact dimensions.
Choose a Deck Oven If
- You make artisan, New York style or hand-stretched pies.
- You have experienced pizza cooks.
- Crust character is central to your brand.
- You also bake bread or other items on a stone.
Choose a Conveyor Oven If
- You need the same result every time with minimal training.
- Delivery or takeout volume is high and steady.
- You also toast sandwiches, heat wings or run a varied menu.
- You want staff to focus on topping and cutting, not watching the oven.
Installation Notes
Check electrical or gas requirements and hood needs for either oven type. Many countertop electric units need a dedicated circuit. Confirm with a licensed electrician and your local building officials.
