Drop-In Hot Food Well Buying Guide: Size, Power and Cutout

Choose a drop-in hot food well by counting the hot items you serve at once, then confirm three things before the counter is built: the exact cutout size from the spec sheet, the voltage and circuit at the counter, and where the controls and any drain will go. A drop-in well sits inside the counter and holds pans at serving temperature, which gives a built-in serving line but means the counter has to be built around the unit you chose.

Drop-in well, steam table or countertop warmer

  • A drop-in well is installed in a counter. It suits a permanent serving line in a cafeteria, buffet, deli or taqueria.
  • A freestanding steam table is a complete unit with its own base, so it can be moved or taken with you when a lease ends. See our steam tables.
  • A countertop unit needs no cutout at all. Our bain marie food warmer sits on the counter and comes in a 4 pan or 6 pan model with 1/3 size pans and lids included, running on 110V.

How many wells

Count the hot items on the line at the same time and add one if you rotate specials. Each full size well holds one 12 x 20 in. pan, or fractional pans with adapter bars. Our Prepline drop-in wells come in one to four wells:

ModelWellsPowerCutout
HFW11 full size120 V, 1,100 W23.5 x 15.625 in.
HFW22 full size120 V23.5 x 29.625 in.
HFW33 full size208/240 Vsee spec sheet
HFW44 full size208/240 V, 4,400 W23.5 x 57.625 in.

All four are insulated. The HFW1 and HFW2 have a 72 in. cord and the HFW4 two 72 in. cords. The HFW3 has infinite controls with indicator lights on a remote control panel, fiberglass insulation and a 1 in. IPS drain.

For smaller pans, the Hatco HWBH-43D is a top mounted drop-in well that holds four 1/3 size pans, with a remote thermostat and a separate power switch, a drain, uninsulated wells and 208 V, 1,650 W, 7.9 A. Its overall size is 13 5/8 W x 28 5/8 D x 9.42 H in.

One model in this category is not a hot well: the Hatco IWB-4 is a 58 in. drop-in cold well cooled with ice, for chilled buffet items, and needs a 57 x 26 in. cutout.

Insulated or uninsulated

In common practice, insulation keeps heat in the well instead of warming the counter around it, which helps with heat-sensitive countertop materials and staff comfort. Our Prepline wells are insulated; the Hatco HWBH-43D lists uninsulated wells. Check the counter maker’s requirements for clearance and heat around an uninsulated unit.

Power and controls

  • 120 V models such as the HFW1 and HFW2 plug in on standard circuits; 208/240 V models such as the HFW3 and HFW4 need the matching circuit. Have a licensed electrician confirm the circuit before install.
  • Controls are often mounted remotely in the counter front. Plan where the control panel goes so staff can reach it and it stays out of spills.
  • Independent controls per well, as on the HFW2 and HFW4, let you hold different foods at different settings.

Wet or dry, and the drain

Many hot wells can run with water in the well or dry; follow the manufacturer’s instructions for your model. Water spreads heat evenly and helps keep food moist. If you run wet, a drain makes emptying the well at closing simple: the HFW3 has a 1 in. IPS drain and the HWBH-43D includes a drain. Plan where the drain line runs inside the counter.

Hot holding and reheating

A hot well holds food; it is not meant to bring cold food up to temperature. We read the following today in Virginia’s adoption of the Food Code (12VAC5-421-820 and 760):

  • Hot held time and temperature control for safety food has to stay at 135 F or above.
  • Food that was cooked, cooled and is reheated for hot holding has to reach at least 165 F for 15 seconds, and the reheating has to be done rapidly, within two hours.

So heat food in an oven, range or kettle first, then move it to the well. Check pan temperatures with a probe thermometer through service. Your local health department has the final say.

Food shields

Food on a guest-facing or self-service line needs a shield in front of it. Plan the guard with the counter so the mounting points line up. Our Prepline SG-1560 is a 15 x 60 x 16.5 in. high sneeze guard with a stainless frame and glass panel for 60 in. steam tables. More warming options are in our warming equipment and heat lamps and strip warmers.

Questions to answer before you buy

  • How many hot items do you serve at once, and in what pan sizes?
  • What voltage and circuits are at the counter?
  • Will you run wet, and where does the drain go?
  • Where will the controls mount?
  • Has the counter builder seen the cutout dimensions?

Frequently asked questions

What size cutout does a drop-in hot food well need?
