A bakery display case is your silent salesperson. Cakes, pastries, cookies and breads sell on appearance, and the right case keeps them fresh and visible all day. The first decision is whether your items need refrigeration or not. After that, size, glass and service style fall into place.

Refrigerated or Dry
Refrigerated cases hold cream cakes, cheesecakes, custards, mousse and anything with dairy fillings. Dry (non-refrigerated) cases are for bread, muffins, cookies, croissants and donuts that are fine at room temperature. Many bakeries use both. Putting bread in a refrigerated case stales it faster, and putting cream pastries in a dry case is a food safety problem.

Sizing
Countertop cases suit coffee shops that sell a small pastry range. Floor models from about 36 to 72 inches suit full bakeries. Count the trays or cake plates you want on display. A typical rule is to show enough to look full at opening while keeping backup product in a reach-in.

Glass and Lighting
Curved glass gives a traditional look and a wide view. Straight glass looks clean and modern. Lighting matters. Good LED lighting on each shelf helps product look fresh without adding much heat. Check the product page for shelf count and lighting details.
Service Style
Full-service cases have rear doors for staff access. Self-service cases have front doors for customers. For cream items or items that need portioning, full service gives more control. For packaged items, self-service can speed up the line.
Utilities
Dry cases often plug into a standard outlet. Refrigerated cases may need a dedicated circuit, and some need a drain for condensate. Read the spec sheet and have a licensed electrician or plumber confirm hookups.
Temperature
Refrigerated items must stay at 41F or below under the FDA Food Code. Refrigerated bakery cases are designed to hold chilled product, not cool freshly baked goods. Cool items fully before loading.
Placement and Clearance
Keep cases out of direct sun and away from ovens and entry doors. Heat and humidity cause condensation on glass and can soften icing. Leave vent clearance as the manual directs.
Cleaning and Care
Wipe glass inside and out daily with a non-scratch cleaner. Remove crumbs from shelves and tracks. On refrigerated cases, clean the condenser coil monthly, which is critical in bakeries where flour dust clogs coils fast.
Merchandising Tips
Put your highest-margin items at eye level and in the center of the case. Use risers and cake stands to add height. Label every item with its name and any allergen notes your local rules require. Restock from the back so the front always looks full, and pull tired items before they look stale.
