Fryer oil foams for a short list of reasons: the oil is worn out, water has got into it, soap was left in the vat after cleaning, or too much wet or heavily breaded food went in at once. Bubbling that settles in a few seconds after the basket drops is normal. Foam that builds, climbs the vat wall or will not go down is a warning to stop and find the cause.
For propane kitchens, see the Cookline CF50-LP 50 lb propane fryer.
Normal bubbling or foam
Water in the food turns to steam when it hits hot oil, and the steam makes large clear bubbles that burst quickly. Foam is different: small, tight bubbles that stack up into a layer, often tan or yellow, and stay. Foam can rise over the top of the vat, and hot oil over the edge is a burn and fire risk. If it is climbing, lift the basket out and let it settle.
Cause 1: old oil
As oil is used it breaks down, and broken-down oil foams. Signs that the oil is finished: it is dark, it smokes at normal frying temperature, it smells sharp, food browns too fast or tastes off, and the foam does not go away. Filtering helps for a while, but it does not make old oil new. Change it.
Cause 2: water
Ice crystals on frozen food, wet baskets, a vat that was not dried after cleaning and condensation dripping from a hood all put water into oil. Shake ice off frozen product away from the fryer, dry baskets before use and never fill baskets over the vat.
Cause 3: soap or cleaner
This is the cause people miss. If the vat was boiled out or washed and not rinsed completely, the residue makes fresh oil foam on the first day. If new oil foams straight away, suspect the last cleaning. The fix is to drain, rinse the vat thoroughly with clean water, dry it completely and refill.
Cause 4: batter, breading and salt
Loose flour, crumbs and batter drips burn in the oil and speed up breakdown. Shake off extra breading before the basket goes in, skim the oil during service and filter it on a schedule. Salt food away from the fryer, not over it, because salt also shortens oil life.
Cause 5: overloading
Too much food at once drops the oil temperature and releases a lot of steam together. Fry smaller batches. The usual guidance is to fill a basket about half full, but follow the manual for your fryer.
Cause 6: too hot, or mixed oils
Oil held above the temperature it is needed at breaks down faster. Turn the fryer down in slow periods and cover the vat when it is off. Topping up with a different kind of oil, or adding fresh oil to very old oil, can also cause foaming. Use one oil, and when a vat is finished, change all of it.
A quick way to find the cause
- New oil foaming on day one: soap residue or water.
- Oil that was fine and now foams with every load: the oil is worn out.
- Foam only with one menu item: that product is too wet, too icy or too heavily breaded.
- Foam only in a rush: overloading.
Daily habits that prevent it
- Filter the oil at least once a day when the fryer is in steady use.
- Skim crumbs during service.
- Keep the oil level at the fill line. Low oil overheats.
- Cover the vat when it is not in use.
- After a boil out, rinse until the water runs clear and dry the vat fully before adding oil.
Safety
Never add water to hot oil and never try to cool foaming oil with ice. If oil is about to overflow, turn the fryer off and step back. Keep the area around the fryer dry, and use the splash guard if your line has one beside a water source. We sell a stainless steel fryer splash guard for that purpose.
When it is the fryer
If oil overheats or will not hold a steady temperature, the thermostat or high limit may be at fault. That needs a technician. Have the model number ready.
Fryer size matters
A fryer that is too small for the menu gets overloaded all day, and the oil suffers. Our floor fryers run from 35 to 80 pound oil capacity. The Cookline CF40-LP fryer, for example, is a 40 pound propane model rated at 90,000 BTU, and the 50 pound version is rated at 120,000 BTU. If you are frying in back-to-back batches all through service, the next size up or a second fryer is usually the real fix.
Frequently asked questions
Is foaming oil dangerous?
It can be. Foam can carry hot oil over the rim of the vat. Stop loading, lift the basket and find the cause before you carry on.
Can I keep using oil that foams?
If the cause is water or one overloaded batch, the oil may recover. If it foams on every load and is dark or smoking, it is finished and should be changed.
Why does brand new oil foam?
Almost always soap or water left in the vat after cleaning. Drain, rinse, dry and refill.
What fryers and parts do you carry?
Gas floor fryers and countertop electric models are under commercial deep fryers and gas fryers, with add-ons under fryer accessories. The rest of the line is in cooking equipment. Freight to the 48 contiguous states is included in the price, powered equipment has a 7 day return window, and financing is offered on orders from 500 dollars.
