How to choose a fryer

Oil capacity

A 40 lb fryer is the common size for a restaurant frying fries and chicken; 50 lb fryers handle busier lines; 75 to 80 lb fryers are for high-volume and fast food. Two smaller fryers are often better than one big one, because you can keep fish and fries in separate oil.

Gas or electric

Gas floor fryers recover temperature fastest and are the standard for busy kitchens. Countertop electric fryers need no gas line and suit smaller menus. Order the right gas type: many models are sold as separate natural gas (NG) and propane (LP) versions.

Energy Star and split pot

Energy Star fryers use less gas for the same output, which pays back on a fryer that runs all day. A split-pot fryer gives two smaller vats in one cabinet so you can fry different foods side by side.

Compare our commercial deep fryers

Oil capacity, fuel and burner rating are taken from each listing. Each gas fryer is built for one fuel, so match the model to the gas at your location.

Fryer sizes at a glance

A 40 lb fryer is the usual starting point for a restaurant that fries as a side item. 50 lb units suit busy lines that fry through the whole service. 70 to 80 lb units are for chicken and fish programs or high volume quick service. Countertop electric fryers in the 10 to 30 lb range fit food trucks, concession stands and small menus where there is no gas line or hood space for a floor model. Flat bottom fryers are made for funnel cakes, doughnuts and other batter items that need open space instead of a basket.

Frequently asked questions

What size commercial fryer do I need?

Count how many baskets you need to drop at your busiest hour. Most kitchens that fry fries and a few appetizers do well with one 40 or 50 lb fryer. If you fry proteins and sides at the same time, two fryers, or a split pot like the SR-F4D-NG, keep flavors apart.

Natural gas or propane fryer?

Order the fuel that is piped to your kitchen. Natural gas and propane models are built with different orifices, so each listing above names its fuel. Food trucks and trailers usually run propane.

What does Energy Star mean on a gas fryer?

Energy Star fryers transfer more of the burner heat into the oil, so they reach temperature and recover with a lower BTU rating. That is why the Migali E models above are listed at fewer BTU than the standard models of the same size.

What is a split pot fryer?

A split pot fryer has one cabinet with two separate oil wells. You can fry two different foods at once, or run one side during slow hours to save oil and gas.

Do I need a splash guard?

If the fryer sits next to an open burner or griddle, a splash guard between them is strongly recommended. We stock an 18-gauge stainless fryer splash guard.

Are they certified?

Certification is listed on each product page. Most fryers here are ETL listed, and the Standard Range fryers are CSA certified.

Is freight included?

Yes. Freight and liftgate delivery are included on every order to the continental United States, with nothing added at checkout.
